This recipe is one that I have had for many years. It’s been baked so many times for friends and neighbors that I can almost do it by heart. Since the recipe makes two loaves it’s a great one to make because you always have another to give away or for guests when they come to visit. My girls don’t let this one sit around too long and my oldest is now making it all by herself and loves to start it on weekend mornings to surprise me. I’ve substituted the fat and sugar out to make it a healthier option! I know you will like it just as much as we do!

Healthier Banana Nut Bread
Ingredients
- 2 Cups Flour
- 1 tsp Salt
- 2 tsp Baking Soda
- 1 Cup Coconut Oil
- 1 ½ Cup Raw Sugar
- ½ Cup Palm Sugar Coconut Palm Sugar
- 4 Overripe Bananas
- 4 Eggs
- 1 Cup Chopped Nuts Can be Pecan, Walnut, Almond or any nut you like. We like Pecans and Walnuts best
Instructions
- Preheat Oven to 350
- Grease 2 glass loaf pans with Butter
- Sift Flour, Salt, and Baking Soda in a bowl
- In seperate bowl (Mixer Bowl) mix liquidated coconut oil, sugar & mix in Bananas, Eggs until blended
- Pour dry ingredients into wet slowly mixing until blended
- Fold in Nuts until well incorporated
- Divide batter evenly into the 2 prepared loaf pans
- Bake with foil on top for 50 min
- Bake an additional 10-20 min with foil OFF of pans or until knife comes out clean
- Let cool 10 min, then take out of pans and wrap in foil or paper wrap
